  • 1 3/4 cups (218 g) all-purpose flour, spooned and leveled
  • 2 1/2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground allspice
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup (168 g) unsalted butter, softened
  • 3/4 cup (165 g) light brown sugar, packed
  • 1/4 cup (50 g) granulated white sugar
  • 2 egg yolks, at room temperature
  • 2 tsp vanilla
  • 6 oz (170 g) cream cheese, cold
  • 2 tbsp (30 ml) apple cider reduction from above
  • 1/4 cup (50 g) granulated white sugar
  • 1/4 tsp ground cinnamon
  • 1/8 tsp ground nutmeg
  • pinch ground allspice
  • 12 tbsp (1428 g) salted butter, melted

Instructions

  1. Prepare the apple cider reduction by simmering apple cider in a saucepan until it reduces by half.
  2. Make the cheesecake filling by mixing cold cream cheese with sugar and vanilla until smooth.
  3. In a separate bowl, cream together softened butter with light brown and granulated sugars. Add egg yolks and the cooled apple cider reduction; mix well.
  4. Combine dry ingredients (flour, spices, baking powder, baking soda, salt) in another bowl and gradually add them to the wet mixture.
  5. Preheat the oven to 350°F (175°C) and scoop dough onto parchment-lined baking sheets. Make an indentation in each cookie ball for the cheesecake filling, then cover with more dough if desired.
  6. Bake for about 11 minutes until edges are golden; brush with melted butter and sprinkle spiced sugar on top.
