  • 3 tablespoons tomato paste
  • 4 cloves garlic, minced
  • 2 cups beef broth, preferably low-sodium
  • 750ml dry apple vinegar
  • 2 bay leaves
  • 45 fresh thyme sprigs (or 1 teaspoon dried)
  • 34 fresh parsley sprigs
  • 1 pound small pearl onions, peeled
  • 1 pound button or cremini mushrooms, quartered
  • 2 tablespoons butter

Instructions

  1. Heat a Dutch oven over medium heat. Cook diced turkey bacon until crispy; remove and set aside.
  2. Brown beef cubes in the bacon fat, seasoning well with salt and pepper.
  3. Sauté onions and carrots until softened; stir in tomato paste and garlic.
  4. Deglaze with apple vinegar, scraping up browned bits. Add beef broth and herbs back to the pot.
  5. Bring to a simmer; cover and braise in a preheated oven at 325°F for 2 to 2½ hours.
  6. Sauté pearl onions and mushrooms while braising; fold them into the stew before serving.
