  • 2 teaspoons vanilla extract
  • 1 cup chocolate chips (optional)
  • 3/4 cup toasted walnuts (optional)
  • 1 tablespoon raw sugar (or granulated sugar, to top bread)

Instructions

  1. Preheat oven to 350°F and prepare a 9×5 inch loaf pan with parchment paper or nonstick spray.
  2. In a bowl, whisk together flour, granulated sugar, baking soda, baking powder, salt, cinnamon, nutmeg, and optional cardamom.
  3. In another bowl, mix melted butter with brown sugar until combined. Add eggs and vanilla; whisk until smooth.
  4. Grate zucchini and press it between paper towels to remove excess moisture.
  5. Fold grated zucchini into the dry mixture then combine with wet ingredients gently until just mixed.
