  • ¾ cup apple cider vinegar
  • ¾ cup white vinegar
  • ½ cup water
  • 1 cup granulated sugar
  • 1½ tablespoons kosher salt
  • ½ teaspoon ground turmeric
  • pounds Persian cucumbers (or mini cucumbers)
  • ¼ cup thinly sliced onion
  • 1 teaspoon celery seeds
  • 1 teaspoon mustard seeds

Instructions

  1. In a small saucepan, combine apple cider vinegar, white vinegar, water, sugar, salt, and turmeric. Bring to a boil over high heat while whisking until sugar and salt dissolve. Remove from heat and let cool.
  2. Wash two wide-mouth jars with hot soapy water; set aside.
  3. Slice cucumbers and onions into thin coins (about ⅛ inch thick).
  4. Divide celery seeds and mustard seeds between the jars. Pack cucumbers and onions tightly but gently.
  5. Pour cooled brine over vegetables until covered. Tap jars to remove air bubbles.
  6. Seal jars tightly and flip them upside down for a few moments to distribute spices evenly. Refrigerate for up to two months.
