  • 23 tbsp Turbinado sugar (optional)

Instructions

  1. Prepare the brown butter by melting cold unsalted butter in a saucepan over medium heat until golden brown. Set aside to cool slightly.
  2. In a mixing bowl, combine flour and salt; add cooled brown butter, water, and vinegar until just combined. Shape into two discs and refrigerate for at least an hour.
  3. For the filling, mix sliced peaches, quartered strawberries, granulated sugar, cornstarch, lemon juice, lemon zest, and salt in a bowl until well coated.
  4. Preheat oven to 375°F (190°C). Roll out one disc of dough into your pie dish; fill with fruit mixture. Roll out the second disc to cover or create a lattice pattern on top.
  5. Bake for about 60–70 minutes until the crust is golden brown and filling is bubbly. Let cool before slicing.
