- 12 oz rotini pasta

- Boil salted water in a large pot and cook rotini until al dente (9-10 minutes). Reserve ½ cup pasta water, drain, and set aside.
- Season chicken with Cajun seasoning, salt, and pepper. Heat olive oil and 1 tbsp butter in a skillet over medium-high heat; sear chicken for 7-8 minutes until golden brown.
- Lower heat and add remaining butter and garlic to the skillet; sauté for 30 seconds.
- Stir in heavy cream and let simmer for 2-3 minutes. Add mozzarella and Parmesan cheese until melted.
