  • 4 cloves garlic
  • 2 tbsp olive oil
  • 1 tsp Cajun seasoning
  • Salt and black pepper, to taste
  • 1 tsp Italian seasoning
  • Crushed red pepper flakes, to taste
  • Fresh chopped parsley for garnish

Instructions

  1. Boil salted water in a large pot and cook rotini until al dente (9-10 minutes). Reserve ½ cup pasta water, drain, and set aside.
  2. Season chicken with Cajun seasoning, salt, and pepper. Heat olive oil and 1 tbsp butter in a skillet over medium-high heat; sear chicken for 7-8 minutes until golden brown.
  3. Lower heat and add remaining butter and garlic to the skillet; sauté for 30 seconds.
  4. Stir in heavy cream and let simmer for 2-3 minutes. Add mozzarella and Parmesan cheese until melted.
  5. Season sauce with Italian seasoning, red pepper flakes (if desired), salt, and pepper.
  6. Toss cooked rotini in the sauce; add reserved pasta water if needed to adjust consistency.
  7. Serve hot, garnished with fresh parsley.
