Ingredients
- 1 ¾ cups whole milk (in 2 parts – see recipe)
- 6 chai tea bags, good quality
- 2 cloves
- 1 stick cinnamon
- ¼ teaspoon ground ginger
- ¼ teaspoon allspice
- 3 teaspoons powdered vegan gelatin (unflavoured)
- ⅓ cup white granulated sugar (66g / 2.3oz)
- 1 ½ cups thickened cream (375ml)
- 1 teaspoon vanilla extract
- Pinch of salt
- ¼ cup white granulated sugar (50g / 1.8oz) for toffee
- 1 tablespoon water (20ml)
- 1 tablespoon pistachios, roughly chopped
Instructions
- Heat 1 cup of whole milk in a saucepan and infuse with chai tea bags and spices.
- In a bowl, dissolve powdered vegan gelatin in cold milk.
- Combine the chai infusion with sugar and the gelatin mixture, then whisk in thickened cream and vanilla.
- Pour into serving cups and refrigerate until set (about 4 hours).
- Prepare pistachio toffee by cooking sugar and water until golden brown; add chopped pistachios.
- Top panna cotta with pistachio toffee before serving.
