  • 6 chai tea bags, good quality
  • 2 cloves
  • 1 stick cinnamon
  • ¼ teaspoon ground ginger
  • ¼ teaspoon allspice
  • 3 teaspoons powdered vegan gelatin (unflavoured)
  • ⅓ cup white granulated sugar (66g / 2.3oz)
  • 1 ½ cups thickened cream (375ml)
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • ¼ cup white granulated sugar (50g / 1.8oz) for toffee
  • 1 tablespoon water (20ml)
  • 1 tablespoon pistachios, roughly chopped

Instructions

  1. Heat 1 cup of whole milk in a saucepan and infuse with chai tea bags and spices.
  2. In a bowl, dissolve powdered vegan gelatin in cold milk.
  3. Combine the chai infusion with sugar and the gelatin mixture, then whisk in thickened cream and vanilla.
  4. Pour into serving cups and refrigerate until set (about 4 hours).
  5. Prepare pistachio toffee by cooking sugar and water until golden brown; add chopped pistachios.
  6. Top panna cotta with pistachio toffee before serving.
