Ingredients
- 2 cups cooked chicken breast, shredded
- 1 cup shredded sharp cheddar cheese
- 1–2 jalapeños, diced
- 2 tbsp ranch seasoning
- 1/4 cup cream cheese
- 1/2 tsp garlic powder
- 1 cup flour
- 2 eggs, beaten
- 1.5 cups breadcrumbs or panko
- 1/2 cup mayo
- 1/4 cup sour cream
- 1 tbsp ranch dressing or seasoning
- 1 tsp lemon juice or white vinegar
- 1 tbsp chopped parsley
- Red pepper flakes, to taste
- Salt & pepper to taste
Instructions
- In a mixing bowl, combine shredded chicken, cheddar cheese, jalapeños, ranch seasoning, cream cheese, garlic powder, salt, and pepper until well mixed.
- Form the mixture into bite-sized balls and chill in the refrigerator for 15–20 minutes.
- Set up a breading station with flour in one bowl, beaten eggs in another, and breadcrumbs in a third.
- Roll each ball in flour, dip in egg, then coat with breadcrumbs (double-coat for extra crunch).
- Heat oil in a frying pan to 350°F (175°C) and fry poppers for about 3–4 minutes per side until golden brown.
- Drain on a wire rack or paper towel-lined plate.
- For the dip, mix mayo, sour cream, ranch dressing seasoning, garlic powder, lemon juice or vinegar, parsley, and seasonings until smooth.
