Ingredients
- 1 lb boneless, skinless chicken breasts, sliced into ½-inch thick cutlets
- 2 tbsp olive oil
- 3 cloves garlic, minced
- ½ cup roasted chestnuts, roughly chopped
- 1 tbsp fresh oregano, chopped (or 1 tsp dried)
- ½ tsp dried thyme
- Salt & freshly cracked black pepper, to taste
- 2 medium Yukon Gold potatoes, cut into 1-inch cubes
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 tbsp fresh sage leaves, roughly chopped (or 1 tsp dried rubbed sage)
- ¼ cup grated Parmesan cheese
- 2 tbsp butter
- 8 oz cremini mushrooms, sliced
- 3 cloves garlic, minced
- ¼ cup fresh basil leaves, optional (for pesto feel)
- 1 ½ cups heavy cream
- ¾ cup grated Parmesan cheese, for sauce
- ¼ cup chestnut puree, or 2–3 tbsp additional roasted chestnuts, finely minced/pasted with a splash of cream
- 1–2 tsp white truffle oil, optional (for added luxury)
- Salt & freshly cracked black pepper, to taste
Instructions
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Toss potato cubes with olive oil, minced garlic, chopped sage, Parmesan, salt, and pepper in a large bowl. Spread on the baking sheet and roast for 25-30 minutes until golden.
- Marinate sliced chicken in olive oil, garlic, chestnuts, oregano, thyme, salt, and pepper for at least 15 minutes. Grill or sauté over medium-high heat until cooked through.
- In a skillet, melt butter and sauté mushrooms and garlic until softened. Add heavy cream and Parmesan cheese; stir until smooth. Mix in chestnut puree and season.
