- 1 small jalapeño, seeded and minced (optional)
- 2 tbsp fresh cilantro, chopped
- Juice of 1 lime
- 2 cups cooked rice (white, brown, or cilantro-lime rice)
- 1 can black beans, drained and rinsed
- 1 piece avocado, sliced or diced
- Fresh cilantro, for garnish
- Lime wedges, for serving
Instructions
- In a mixing bowl, combine olive oil, chili powder, cumin, smoked paprika, garlic powder, salt, pepper, and lime juice. Add the chicken and coat well; marinate for at least 15 minutes.
- In another bowl, mix together pineapple, red bell pepper, red onion, jalapeño (if using), cilantro, lime juice, and salt; set aside.
- Heat a skillet over medium-high heat. Cook marinated chicken for about 6–7 minutes on each side until fully cooked (165°F internal temperature).
- Assemble bowls with a base of rice topped with black beans and sliced chicken. Add pineapple salsa on top and garnish with avocado slices.
