Ingredients

Scale
  • 1 lb boneless, skinless chicken breast
  • 2 cups shredded cabbage
  • 1 large carrot, julienned
  • ½ batch green onions, chopped
  • 12 oz uncooked chow mein noodles
  • 3 tbsp oil
  • 3 tbsp low-sodium soy sauce
  • ½ cup chicken broth
  • 1 tbsp cornstarch
  • 3 tbsp granulated sugar

Instructions

  1. In a small bowl, whisk together oyster sauce, soy sauce, chicken broth, cornstarch, and sugar until smooth. Set aside.
  2. Cook chow mein noodles according to package instructions. Drain and rinse with cold water to prevent sticking.
  3. Heat 2 tablespoons of oil in a large wok over medium-high heat. Add bite-sized chicken strips and cook until golden brown (about 5-7 minutes). Remove from the pan.
  4. In the same pan, add remaining oil and sauté cabbage, carrots, and garlic for about 3-4 minutes until softened.
  5. Return cooked chicken and noodles to the pan. Pour in the prepared sauce and stir well to combine. Cook for an additional 2 minutes until heated through.
  6. Garnish with chopped green onions before serving.
