  • 1 (15 ounce) can red kidney beans (drained and rinsed)
  • 1 (15 ounce) can cannellini beans (drained and rinsed)
  • 1 teaspoon salt (or to taste)
  • 1/2 teaspoon black pepper (or to taste)
  • 1/2 teaspoon dried thyme
  • 1 1/2 cups ditalini pasta
  • 1/4 cup chopped fresh basil (optional)
  • 1/2 cup grated Parmesan cheese (optional)

Instructions

  1. In a large pot over medium-high heat, cook 1 pound of ground turkey until browned, about 5 minutes. Drain excess grease.
  2. Add diced onion, carrots, and celery; cook for 7 to 10 minutes until softened. Stir in minced garlic during the last minute.
  3. Pour in 4 cups of chicken broth and add 2 cans of diced tomatoes along with drained red kidney beans and cannellini beans. Season with salt, pepper, and thyme; bring to a boil.
  4. Stir in 1.5 cups of ditalini pasta; reduce heat and let simmer for about 7 minutes until pasta is al dente.
