Ingredients

Scale
  • 1 lb lean ground beef
  • 2 Tbsp olive oil
  • 1 ½ cups chopped yellow onion
  • 1 cup diced carrots
  • 1 cup diced celery
  • 3 cloves garlic (minced)
  • 3 cans (8 oz each) tomato sauce
  • 2 cans (14.5 oz each) low-sodium chicken broth
  • 1 can (15 oz) diced tomatoes
  • 1 cup dry ditalini pasta
  • 1 can (15 oz) dark red kidney beans, drained and rinsed
  • 1 can (15 oz) great northern beans, drained and rinsed

Instructions

  1. In a large pot, heat 1 tablespoon of olive oil over medium-high heat. Brown the ground beef until fully cooked and drain excess fat.
  2. Add remaining olive oil to the pot along with onions, carrots, and celery. Sauté until tender, then add minced garlic for an additional minute.
  3. Pour in chicken broth, tomato sauce, water, and diced tomatoes. Stir in sugar and seasonings before returning the beef to the pot. Bring to a boil, reduce heat, and let simmer for 15-20 minutes.
  4. Cook ditalini pasta separately according to package instructions until al dente; drain.
  5. Combine cooked pasta with the soup along with kidney and great northern beans. Adjust consistency with broth or water if necessary and cook for an additional minute.
  6. Serve warm garnished with fresh parsley and cheese if desired.
