  • 23 tablespoons olive oil
  • 1 medium onion (diced)
  • 4 cloves garlic (mashed)
  • 1 1/2 cups arborio rice (uncooked)
  • 8 cups chicken broth
  • 1 tsp fresh thyme
  • 1 tsp dried oregano
  • 1/2 cup lemon juice + zest of 2 lemons
  • 2 eggs
  • 2 egg yolks
  • 3/4 pound cooked chicken breast (shredded)
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Sauté diced onions for about 6-7 minutes until translucent; add mashed garlic and sauté for another 2 minutes.
  3. Stir in uncooked rice, broth, thyme, and oregano; reduce heat to low, cover, and simmer for 20-25 minutes.
  4. In a bowl, whisk together eggs, egg yolks, lemon zest, and juice. Set aside.
  5. Slowly ladle about 1 3/4 cups of soup into the egg mixture while whisking continuously to temper the eggs.
  6. Blend the tempered mixture until smooth; return it to the pot with the remaining soup.
  7. Stir in shredded chicken and season with salt and pepper to taste.
  8. Garnish with parsley and dill before serving hot.
