Ingredients
- 2–3 tablespoons olive oil
- 1 medium onion (diced)
- 4 cloves garlic (mashed)
- 1 1/2 cups arborio rice (uncooked)
- 8 cups chicken broth
- 1 tsp fresh thyme
- 1 tsp dried oregano
- 1/2 cup lemon juice + zest of 2 lemons
- 2 eggs
- 2 egg yolks
- 3/4 pound cooked chicken breast (shredded)
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Sauté diced onions for about 6-7 minutes until translucent; add mashed garlic and sauté for another 2 minutes.
- Stir in uncooked rice, broth, thyme, and oregano; reduce heat to low, cover, and simmer for 20-25 minutes.
- In a bowl, whisk together eggs, egg yolks, lemon zest, and juice. Set aside.
- Slowly ladle about 1 3/4 cups of soup into the egg mixture while whisking continuously to temper the eggs.
- Blend the tempered mixture until smooth; return it to the pot with the remaining soup.
- Stir in shredded chicken and season with salt and pepper to taste.
- Garnish with parsley and dill before serving hot.
