  • 12 oz rotini pasta
  • 1 cup heavy cream
  • 1 cup whole milk
  • 6 oz Velveeta cheese, cubed
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • Cajun seasoning
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter, divided
  • 1 teaspoon garlic powder
  • Salt and black pepper, to taste
  • 4 cloves garlic, minced
  • Fresh chopped parsley for garnish

Instructions

  1. Boil rotini in salted water until al dente (9-11 minutes). Reserve 1 cup pasta water and drain.
  2. In a skillet, heat olive oil and butter over medium-high heat. Cook chicken seasoned with Cajun seasoning until golden brown (8-10 minutes). Remove and keep warm.
  3. In the same skillet, sauté garlic in remaining butter, then add heavy cream, whole milk, and Velveeta cheese. Stir until melted.
  4. Mix in mozzarella and Parmesan, simmer until thickened. Toss cooked rotini in the sauce, adding reserved pasta water as needed.
  5. For the Cajun drizzle, melt butter with a pinch of Cajun seasoning. Serve the pasta topped with chicken and the drizzle.
