- 1 package (20 oz) cheese tortellini
- 1 tablespoon olive oil
- 1 lb beef sirloin, thinly sliced
- 1 green bell pepper, sliced
- 1 onion, sliced
- 2 cloves garlic, minced
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 2 cups whole milk
- ½ cup shredded provolone cheese
- ½ cup grated Parmesan cheese
- Salt and pepper to taste
Instructions
- Cook the tortellini according to package instructions until al dente. Drain and set aside.

- In the same skillet, sauté the green bell pepper, onion, and garlic until softened (about 5–7 minutes). Combine with the reserved beef.
- In a separate saucepan, melt butter over medium heat. Whisk in flour for about 1 minute before gradually adding milk while whisking until thickened (3-4 minutes). Stir in provolone and Parmesan until smooth; season with salt and pepper.
- Combine cooked tortellini with beef and vegetables, then pour over the cheese sauce and stir gently to coat.
