Indulge in the delightful flavors of Creamy Beef and Vegetable Tortellini, a comforting Italian-inspired dish that seamlessly combines tender beef with sautéed vegetables enveloped in a rich and creamy cheese sauce. Perfect for any occasion—from weeknight dinners to gatherings—this recipe is both easy to prepare and family-friendly.

Ingredients

Scale
  • 1 package (20 oz) cheese tortellini
  • 1 tablespoon olive oil
  • 1 lb beef sirloin, thinly sliced
  • 1 green bell pepper, sliced
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups whole milk
  • ½ cup shredded provolone cheese
  • ½ cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Cook the tortellini according to package instructions until al dente. Drain and set aside.
  2. Heat olive oil in a large skillet over medium-high heat. Add the beef sirloin and cook until browned (about 5 minutes). Remove from skillet and set aside.
  3. In the same skillet, sauté the green bell pepper, onion, and garlic until softened (about 5–7 minutes). Combine with the reserved beef.
  4. In a separate saucepan, melt butter over medium heat. Whisk in flour for about 1 minute before gradually adding milk while whisking until thickened (3-4 minutes). Stir in provolone and Parmesan until smooth; season with salt and pepper.
  5. Combine cooked tortellini with beef and vegetables, then pour over the cheese sauce and stir gently to coat.
  6. Serve hot, garnished with fresh parsley or extra Parmesan if desired.
