  • 1.5 lbs boneless, skinless chicken breasts
  • 2 tbsp Cajun seasoning
  • 1 lb linguine pasta
  • 4 tbsp butter
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 medium red onion, thinly sliced
  • 2 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese, plus more for garnish
  • 1/4 cup grated Romano cheese
  • 1/4 tsp red pepper flakes (optional)
  • Salt and black pepper to taste
  • 2 tbsp chopped sun-dried tomatoes, oil-packed, drained
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh basil

Instructions

  1. Cook linguine according to package instructions. Reserve ½ cup of pasta water before draining. Set aside.
  2. Season the chicken pieces with Cajun seasoning. In a skillet over medium heat, add olive oil. Sauté the chicken until cooked through, about 7-10 minutes. Remove from the skillet and set aside.
  3. In the same skillet, add sliced bell peppers and onion. Cook until soft, about 5 minutes. Add minced garlic and cook for an additional minute until fragrant.
  4. Pour in the chicken broth and bring to a simmer. Allow it to cook briefly while you prepare the sauce.
  5. In another pan, melt butter over medium heat. Add minced garlic and cook for about 30 seconds until fragrant. Stir in cream, Parmesan cheese, Romano cheese, red pepper flakes (if using), salt, and black pepper. Mix until smooth.
  6. Toss cooked linguine with the creamy sauce in a large bowl. If needed, thin out with reserved pasta water until desired consistency is reached.
  7. Add back in the sautéed chicken, veggies, sun-dried tomatoes, and parsley. Mix everything well until all ingredients are coated in sauce.
  8. Top with additional Parmesan cheese and fresh basil before serving warm.
