Instructions

  2. In a skillet over medium-high heat, sear seasoned chicken breasts until golden brown on both sides. Remove from the skillet.
  3. In the same skillet, sauté sliced mushrooms until tender. Add minced garlic, then pour in chicken broth and heavy cream; stir in Parmesan cheese.
  4. Return chicken to the skillet; simmer until the sauce thickens.
  5. For the basil pesto cream sauce: whisk together pesto, Greek yogurt (or heavy cream), and Parmesan cheese; thin if needed.
  6. Serve roasted potatoes alongside creamy chicken drizzled with basil pesto sauce and garnish with fresh herbs.
