  • 1214 cloves garlic, peeled
  • 500g potatoes, raw, peeled
  • 250350ml vegetable broth
  • 60ml soy or oat cream
  • 3 tbsp nutritional yeast
  • Olive oil
  • Sea salt

Instructions

  1. Preheat the oven to 200°C (400°F). Place garlic on a baking sheet, drizzle with olive oil, and sprinkle with salt. Roast for 15-20 minutes until golden.
  2. While roasting, peel and cube the potatoes.
  3. In a pot, combine roasted garlic, potatoes, water to cover, and vegetable broth. Bring to a boil over medium heat.
  4. Simmer for about 10 minutes until potatoes are tender. Blend until smooth.
  5. Return to heat and stir in cream, nutritional yeast, onion powder (if using), and black pepper; heat through.
  6. For croutons: Cube old bread, toss with olive oil, and toast in the oven for 5-7 minutes.
