Ingredients
- 12–14 cloves garlic, peeled
- 500g potatoes, raw, peeled
- 250–350ml vegetable broth
- 60ml soy or oat cream
- 3 tbsp nutritional yeast
- Olive oil
- Sea salt
Instructions
- Preheat the oven to 200°C (400°F). Place garlic on a baking sheet, drizzle with olive oil, and sprinkle with salt. Roast for 15-20 minutes until golden.
- While roasting, peel and cube the potatoes.
- In a pot, combine roasted garlic, potatoes, water to cover, and vegetable broth. Bring to a boil over medium heat.
- Simmer for about 10 minutes until potatoes are tender. Blend until smooth.
- Return to heat and stir in cream, nutritional yeast, onion powder (if using), and black pepper; heat through.
- For croutons: Cube old bread, toss with olive oil, and toast in the oven for 5-7 minutes.
