  • 1 English cucumber (diced)
  • 3 green onions (sliced)
  • ⅓ cup mayonnaise
  • ⅓ cup sour cream

  • 1 tablespoon Dijon mustard
  • 1 garlic clove (minced)

Instructions

  2. Boil water in a large pot. Add shrimp and cook for 2-3 minutes until pink.
  3. Prepare an ice bath while shrimp cooks. Transfer cooked shrimp to ice bath for 3 minutes before draining.
  4. Chop cooled shrimp into bite-sized pieces.
  5. In another bowl, combine chopped shrimp, diced cucumber, sliced green onions, and dressing. Mix well.
  6. Serve immediately or chill for optimal flavor.
