Ingredients

Scale
  • 2 1/4 cups bread flour
  • 3/4 cup cake flour
  • 1 tsp salt
  • 1 cup warm milk
  • 3 tbsp unsalted butter
  • 3 tbsp granulated sugar
  • 2 tsp instant yeast
  • 1 egg
  • Oil (for frying)
  • 2 tbsp vegetable oil
  • 1 onion, diced
  • 1 carrot, diced
  • 3 potatoes, diced
  • 0.3 lbs ground beef
  • 1 tbsp soy sauce
  • 1 tbsp ketchup
  • 3 cubes Japanese curry roux
  • 1 cup water
  • 1 tbsp cornstarch
  • 1 egg (beaten)
  • 1 1/2 cups panko breadcrumbs

Instructions

  1. In a mixing bowl, combine the bread flour, cake flour, salt, sugar, and instant yeast.
  2. Melt the butter and add it to the warm milk. Pour this mixture into the dry ingredients along with one beaten egg.
  3. Mix until a dough forms. Knead on a floured surface for about 10 minutes until smooth and elastic.
  4. Heat vegetable oil in a pan over medium heat. Add diced onions and sauté until translucent.
  5. Add diced carrots and potatoes; cook until they begin to soften.
  6. Stir in ground beef and cook until browned.
  7. Add soy sauce, ketchup, curry roux cubes, and water; simmer until thickened.
  8. Divide dough into small balls (about 16). Flatten each ball into a circle.
  9. Place some filling in the center of each circle; fold over and pinch edges to seal.
  10. Heat oil in your deep fryer or pot to 350°F (175°C).
  11. Dip each filled bun into beaten egg followed by panko breadcrumbs.
  12. Fry in batches until golden brown on all sides.
