  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • 2 teaspoons sesame oil
  • 14 oz vegan ground sausage or beef
  • ¼ cup panko breadcrumbs
  • 2 prepared vegan eggs
  • 1 tablespoon grated ginger
  • 1 tablespoon minced chives
  • 2 teaspoons rice vinegar
  • ½ teaspoon black pepper
  • ½ teaspoon granulated sugar
  • 34 baby bok choy (roughly chopped)
  • 15 wonton wrappers (quartered or sliced)
  • Sliced green onion (for serving)
  • Chili oil (for garnish)

Instructions

  1. Heat olive oil in a soup pot over medium heat. Sauté chopped onions, ginger, and garlic until onions caramelize (5-6 minutes).
  2. Add 1 cup of broth; scrape up brown bits. Stir in remaining broth, optional mushrooms, soy sauce, rice vinegar, and sesame oil. Simmer covered for 30 minutes to 1 hour.
  3. In a mixing bowl, combine filling ingredients (vegan sausage, breadcrumbs, vegan eggs, soy sauce, ginger, chives, vinegar, pepper, sugar). Let rest for 5-10 minutes.
  4. Drop teaspoon-sized filling balls into simmering broth; cook covered for 15 minutes.
  5. Stir in chopped bok choy; simmer until tender (2-3 minutes).
  6. Add wonton wrappers one at a time while stirring gently; simmer for another 2-3 minutes.
  7. Serve in bowls garnished with green onions and chili oil.
