  • 1/2 cup dill pickle juice
  • 1 cup cheddar cheese (small diced)
  • 1 cup sliced dill pickles
  • 3 tablespoons fresh dill (chopped)
  • 3 tablespoons white onion (finely chopped)
  • 2/3 cup mayonnaise
  • 1/3 cup sour cream
  • 1/4 cup dill pickle juice
  • 1/4 teaspoon Sriracha
  • salt to taste
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh dill (chopped)

Instructions

  1. Cook elbow pasta according to package instructions until al dente; rinse under cold water and drain.
  2. In a mixing bowl, combine cooked pasta with 1/2 cup of dill pickle juice and let sit for 5 minutes before draining again.
  3. In another bowl, mix mayonnaise, sour cream, 1/4 cup dill pickle juice, Sriracha, salt, and black pepper until smooth.
  4. In a large serving bowl, combine marinated pasta with diced cheddar cheese, sliced pickles, fresh dill, and finely chopped onion. Toss with the dressing until well combined.
  5. Refrigerate for 4–6 hours to allow flavors to meld before serving chilled.
