- 1 tsp dried rosemary (for potatoes)
- 2 tbsp butter
- ¼ cup fresh basil leaves
- 2–3 tsp white truffle oil, adjust to taste
- Shaved Parmesan cheese, for generous topping
Instructions
- Preheat oven to 400°F (200°C). Toss potato cubes with olive oil, Parmesan, minced garlic, dried rosemary, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes until crispy.
- While the potatoes are roasting, coat chicken slices with olive oil, minced garlic, grated Parmesan, Italian herbs, salt, and pepper. Heat a cast iron skillet over medium-high heat and sear chicken for 2-3 minutes per side until golden brown.
- In the same skillet, melt butter over medium heat. Add sliced mushrooms and garlic; cook until softened. Stir in heavy cream and Parmesan cheese until smooth. Add truffle oil to taste.
