  • 7 large bell peppers (top and core removed)

Instructions

  1. Preheat your oven to 375°F. Place the prepared bell peppers cut side up in a baking dish.
  2. Heat olive oil in a large pan over medium heat. Sauté diced onion until softened, then add minced garlic and cook for an additional minute.
  3. Add lean ground beef, cooking until no longer pink (about 5–6 minutes), breaking it up with a wooden spoon.
  4. Stir in cooked brown rice, diced tomatoes, tomato paste, oregano, and paprika. Cook until slightly reduced (4–5 minutes). Season with salt and pepper to taste.
  5. Stuff each pepper evenly with the beef mixture and bake for about 10–12 minutes until the peppers are tender.
  6. Sprinkle cheese on top of each pepper and bake for an additional 5–7 minutes until melted.
