  • 2 boneless, skinless chicken breasts
  • 12 oz rigatoni pasta
  • 5 cloves garlic, minced
  • 2 cups baby spinach
  • 1½ cups heavy cream
  • 8 oz cream cheese
  • 1¼ cups grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 2 tbsp olive oil
  • 4 tbsp butter
  • Salt and black pepper, to taste
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ¼ cup reserved pasta water

Instructions

  1. In a large pot, bring generously salted water to a boil.
  2. Add the rigatoni pasta and cook until al dente according to package instructions.
  3. Reserve ¼ cup of pasta water before draining; then set aside the drained pasta.
  4. Season the chicken pieces with salt, pepper, garlic powder, and onion powder.
  5. In a large skillet over medium-high heat, heat olive oil and 2 tablespoons of butter.
  6. Add the chicken to the skillet and cook until golden brown and fully cooked (about 6–7 minutes). Remove from heat and set aside.
  7. In the same skillet, reduce heat to medium.
  8. Add 2 tablespoons of butter along with minced garlic; sauté until fragrant (about 30 seconds).
  9. Toss in baby spinach and cook until just wilted.
  10. Pour in heavy cream and stir in cream cheese until smooth and melted.
  11. Add grated Parmesan cheese and shredded mozzarella cheese; stir continuously until thickened.
  12. If necessary, add reserved pasta water gradually for desired sauce consistency.
  13. Return cooked rigatoni and chicken to the skillet with the sauce.
  14. Stir well until all ingredients are evenly coated in creamy sauce.
  15. Plate your Garlic Parmesan Chicken With Spinach hot.
  16. Garnish with chopped fresh parsley and an extra sprinkle of Parmesan if desired.
