- 2 boneless, skinless chicken breasts
- 12 oz rigatoni pasta
- 5 cloves garlic, minced
- 2 cups baby spinach
- 1½ cups heavy cream
- 8 oz cream cheese
- 1¼ cups grated Parmesan cheese
- 1 cup shredded mozzarella cheese
- 2 tbsp olive oil
- 4 tbsp butter
- Salt and black pepper, to taste
- ½ tsp garlic powder
- ½ tsp onion powder
- ¼ cup reserved pasta water
Instructions
- In a large pot, bring generously salted water to a boil.
- Add the rigatoni pasta and cook until al dente according to package instructions.
- Reserve ¼ cup of pasta water before draining; then set aside the drained pasta.
- Season the chicken pieces with salt, pepper, garlic powder, and onion powder.
- In a large skillet over medium-high heat, heat olive oil and 2 tablespoons of butter.
- Add the chicken to the skillet and cook until golden brown and fully cooked (about 6–7 minutes). Remove from heat and set aside.
- In the same skillet, reduce heat to medium.
- Add 2 tablespoons of butter along with minced garlic; sauté until fragrant (about 30 seconds).
- Toss in baby spinach and cook until just wilted.
- Pour in heavy cream and stir in cream cheese until smooth and melted.
- Add grated Parmesan cheese and shredded mozzarella cheese; stir continuously until thickened.
- If necessary, add reserved pasta water gradually for desired sauce consistency.
- Return cooked rigatoni and chicken to the skillet with the sauce.
- Stir well until all ingredients are evenly coated in creamy sauce.
