  • 1½ cups cooked jasmine or basmati rice
  • 1 tbsp olive oil
  • 1 tbsp chopped fresh basil
  • Salt & pepper to taste
  • ½ cup plain Greek yogurt
  • ½ cup grated Parmesan cheese
  • ½ cup heavy cream
  • 1 clove garlic, minced
  • 1 tbsp butter
  • Salt & pepper to taste
  • Water or chicken broth to thin, if needed

Instructions

  1. Marinate chicken by mixing minced garlic, olive oil, oregano, lemon zest, salt, and pepper. Rub mixture on chicken and grill for 5–6 minutes per side until cooked through. Set aside.
  2. Preheat oven to 400°F (200°C). Toss diced potatoes with olive oil, garlic, Parmesan cheese, rosemary or thyme, salt, and pepper. Roast on a baking sheet for 20–25 minutes until golden.
  3. In a saucepan over low heat, combine cooked rice with olive oil and fresh basil; season with salt and pepper.
  4. For the Alfredo sauce, melt butter in a skillet over medium heat. Sauté garlic until fragrant; then add heavy cream and Parmesan cheese until smooth. Stir in Greek yogurt and adjust thickness as needed.
  5. Assemble by serving grilled chicken topped with Alfredo sauce alongside crispy potatoes and basil-infused rice.
