- ½ cup heavy cream

- 2 medium Yukon Gold potatoes, diced
- ¼ cup crumbled feta cheese
- 2 tbsp Greek yogurt
- ½ tsp crushed red pepper flakes
- 1 tbsp basil pesto
- Water to thin if needed
- Fresh parsley or dill for garnish

Instructions
- Preheat your oven to 400°F (200°C). Toss diced Yukon Gold potatoes with olive oil, oregano, garlic, salt, and pepper on a baking sheet. Roast for 25–30 minutes until crispy.
- Toss chicken bites with olive oil, garlic, oregano, lemon zest, salt, and pepper. Grill or pan-sear over medium-high heat for 4–5 minutes until cooked through and golden. Set aside.
- Cook pasta according to package instructions until al dente. In a skillet, melt butter over medium heat and sauté minced garlic until fragrant. Stir in heavy cream, Parmesan cheese, lemon zest, and lemon juice. Simmer for 3–5 minutes until thickened slightly. Toss cooked pasta into the sauce until well coated.
