Ingredients
- 1 lb boneless, skinless chicken breasts
- 2 medium Yukon Gold potatoes
- 8 oz cremini mushrooms
- 1 ½ cups heavy cream
- ¾ cup grated Parmesan cheese
- 2 tbsp fig jam
- 2 tbsp balsamic glaze
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 tbsp fresh oregano, chopped (or 1 tsp dried)
- ½ tsp dried thyme
- Salt & freshly cracked black pepper to taste
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Toss potato cubes with olive oil, grated Parmesan, minced garlic, Italian herbs, salt, and pepper. Spread evenly on the baking sheet and roast for 25-30 minutes until golden and crispy.
