  • 1 demi baguette
  • ½ cup basil pesto
  • Gel food coloring (black)
  • 12 ounces cherry tomatoes
  • Olive oil
  • Salt
  • Black pepper
  • Red pepper flakes
  • Fresh basil for garnish
  • Balsamic vinegar glaze

Instructions

  1. Preheat oven to 350°F.
  2. Fill a silicone skull mold with mozzarella pearls and bake for 6-7 minutes until melted.
  3. Remove from the oven, press into shape with an oiled spoon, and cool completely in molds.
  4. Increase oven temperature to 475°F.
  5. Halve cherry tomatoes, place cut-side down on parchment-lined baking sheet, drizzle with olive oil, season with salt, pepper, and red pepper flakes, then roast for 10-15 minutes.
  6. Slice the baguette into ½-inch pieces and toast in the oven for 8-10 minutes until lightly browned.
  7. Mix basil pesto with black gel food coloring until desired hue is achieved.
  8. Spread black pesto on toasted bread slices and return them to the oven for another 8-10 minutes until edges are golden brown.
  9. Assemble bruschetta by topping each slice with roasted tomatoes and mozzarella skulls.
  10. Serve on a platter drizzled with balsamic glaze and sprinkle fresh basil.
