Instructions

  2. In another bowl, mix melted coconut oil (or butter), egg (or substitute), and vanilla extract. Stir in maple syrup until well combined.
  3. Add dry ingredients to wet mixture and fold in grated carrots gently.
  4. Chill the dough for 30 minutes in the refrigerator.
  5. Preheat your oven to 325°F (165°C) and prepare a baking sheet lined with parchment paper or silicone mat.
  6. Scoop rounded dough onto the baking sheet and flatten each scoop slightly.
