  • Dijon mustard
  • Wholegrain mustard
  • Fresh parsley, chopped
  • Cream
  • Potatoes, peeled
  • Butter
  • Milk or cream
  • Carrots, trimmed
  • Honey or maple syrup

Instructions

  1. Season bone-in chicken breasts with olive oil, garlic powder, salt, and black pepper. Sear in a cast iron skillet over medium-high heat until golden brown and cooked through.
  2. In the same pan, melt butter and sauté minced garlic until fragrant. Add chicken broth, Dijon mustard, wholegrain mustard, cream, and parsley; simmer until thickened.
  3. Boil peeled potatoes in salted water until soft; drain and mash with butter and milk (or cream). Season to taste.
  4. Melt butter in a saucepan for glazed carrots. Add trimmed carrots with honey (or maple syrup) and season; cook until tender.
  5. Serve chicken topped with sauce alongside mashed potatoes and glazed carrots.
