- 1 tablespoon water
- ¾ cup powdered sugar
- 1–2 tablespoons milk
Instructions
- Prepare the filling by cooking blueberries in a saucepan over medium heat until softened. Mix in sugar, cornstarch, and salt; cook until thickened. Stir in lemon juice and let cool.
- Preheat oven to 425°F (220°C) and line baking sheets with parchment paper.
- Roll out pie crust and cut into circles. Place half on the sheet, spoon filling onto each, then cover with remaining circles and crimp edges.
- Brush tops with egg wash and bake for about 20 minutes until golden brown.
- Drizzle cooled pies with icing made from powdered sugar and milk.
