  • 8 oz fettuccine pasta
  • 1 tbsp butter
  • 3 cloves garlic, minced
  • 1 ½ cups heavy cream
  • ½ cup grated Parmesan cheese
  • 2 medium Yukon Gold potatoes, cut into ½-inch cubes
  • 1 head of garlic, cloves separated and smashed
  • ½ tsp dried rosemary
  • ¼ cup fresh basil leaves
  • ¼ cup dried figs, roughly chopped
  • 1 tbsp balsamic vinegar

Instructions

  1. Preheat oven to 425°F (220°C). Toss potato cubes with olive oil, smashed garlic, rosemary, salt, and pepper. Roast on a baking sheet for 20-25 minutes until golden.
  2. Preheat another oven to 400°F (200°C). Prepare chicken by dipping in egg and dredging in a mixture of panko breadcrumbs and oregano. Sear in an oven-safe skillet for 2-3 minutes per side. Bake for 10-12 minutes until cooked through, then toss with hot honey.
  3. Cook fettuccine according to package instructions. Reserve pasta water before draining.
  4. For the Alfredo sauce, sauté minced garlic in butter, add heavy cream, and stir in Parmesan until smooth; season to taste.
  5. Assemble by combining fettuccine with Alfredo sauce and serving topped with crispy chicken and roasted potatoes drizzled with fig-balsamic pesto.
