- Salt & freshly cracked black pepper to taste
- 2 tbsp olive oil
- 3 cloves garlic, minced
- ¼ cup hot honey
- 1 tbsp fresh lemon juice
- 2 medium Yukon Gold potatoes
- ¼ cup grated Parmesan cheese
- 1 tsp dried Italian herbs
- 1 tbsp olive oil
- 6 oz cremini mushrooms, sliced
- 2 cloves garlic, minced
- ¼ cup fresh basil leaves
- 1 ½ cups heavy cream
- ¾ cup grated Parmesan cheese
- 2–3 tsp white truffle oil
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper. Toss potato cubes with olive oil, grated Parmesan cheese, minced garlic, Italian herbs, salt, and pepper. Spread on the baking sheet and roast for 25-30 minutes until golden and crispy.
- While the potatoes roast, mix flour, garlic powder, oregano, paprika, salt, and pepper in a shallow dish. Dredge chicken pieces in the mixture. In a large skillet over medium-high heat, cook chicken in olive oil until golden brown (5-7 minutes). Remove chicken.
- In the same skillet, sauté minced garlic until fragrant. Add hot honey and lemon juice; simmer briefly before returning chicken to coat.
