Ingredients
- 2 lbs (900 grams) sweet apples (such as Gala or Fuji)
- 10 cups water
- 2 tablespoons brown sugar
- 4-inch piece of ginger
- 2 cinnamon sticks
- 2 teaspoons black peppercorns
Instructions
- Wash and chop the apples into quarters, leaving the skins on.
- In an Instant Pot or stock pot, combine apples, sliced ginger, brown sugar, cinnamon sticks, black peppercorns, and water.
- For Instant Pot: Lock the lid and cook at high pressure for 18 minutes; then manually release steam. For stove top: Bring to a boil, then simmer covered for about 30 minutes until apples are soft.
- Strain the mixture through a fine mesh sieve into a pitcher or jars, pressing down on solids to extract juices.
- Allow to cool before storing in airtight containers.
