Ingredients

Scale
  • 4 salmon fillets (6 oz each)
  • 2 lemons (juice and slices)
  • 4 cloves garlic (minced)
  • 4 medium potatoes (about 2 lbs)
  • 1 lb broccoli florets
  • 1/2 cup unsalted butter
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Wash and cut the potatoes into small cubes. Toss them in olive oil, salt, pepper, and paprika until coated.
  3. Spread the potatoes on one side of the baking sheet and roast for 25 minutes, stirring halfway.
  4. Meanwhile, melt butter in a saucepan over medium heat. Add minced garlic and cook until fragrant, then stir in lemon juice.
  5. Season salmon fillets with salt and pepper. After 15 minutes of roasting time for the potatoes, add salmon to the baking sheet along with lemon slices on top.
  6. Toss broccoli florets with olive oil, salt, and pepper; place them on the baking sheet as well.
  7. Roast everything together for another 15-20 minutes or until the salmon is cooked through and broccoli is tender.
  8. Let rest briefly before serving.
