  • 2 medium Yukon Gold potatoes, diced
  • 1 tbsp olive oil for potatoes
  • 1 clove garlic for potatoes, minced
  • 1 tsp chopped fresh sage (or ½ tsp dried sage)
  • 2 tbsp grated Parmesan cheese for potatoes
  • 1 tbsp fresh parsley, chopped
  • Lemon wedges for serving

Instructions

  1. 1. Marinate the chicken: In a bowl, mix olive oil, lemon zest, lemon juice, minced garlic, chopped chestnuts, oregano, salt, and pepper. Coat the chicken slices in this marinade.
  2. 2. Grill the chicken: Heat a skillet over medium-high heat and cook the marinated chicken for 3–4 minutes per side until golden brown.
  3. 3. Prepare the Alfredo sauce: In a saucepan, melt butter over medium heat. Sauté garlic until fragrant, then add heavy cream, Parmesan cheese, chestnuts, lemon zest, and dill. Stir until smooth.
  4. 4. Roast the potatoes: Preheat oven to 400°F (200°C). Toss diced potatoes with olive oil, minced garlic, sage, salt, and pepper on a baking sheet. Roast for 20–25 minutes until crispy.
