Instructions
- Preheat your oven to 350°F (175°C) and prepare a 9×5 inch loaf pan with parchment paper.
- In a large bowl, mix wet ingredients: zucchini, eggs, oil, yogurt, and vanilla until well combined.
- In another bowl, whisk together dry ingredients: flour, sugar, baking powder, salt, and spices. Gradually add to the wet mixture and stir gently until just incorporated.
