Instructions

  3. Stir in garlic and herbs; cook for another minute.
  4. Add flour, stirring to coat vegetables; cook for one minute.
  5. Pour in vegetable broth to deglaze the pot and scrape up flavorful bits.
  6. Stir in potatoes, corn, broccoli, and remaining broth; season with salt and pepper.
  7. Bring to a simmer and cover; cook for about 10–12 minutes until potatoes are tender.
  8. Stir in cream and cheddar cheese until smooth.
