Ingredients

Scale
  • 1 lb. ground beef
  • 8 cups chicken broth
  • 8 oz. uncooked elbow macaroni
  • 1 cup heavy cream
  • 8 oz. sharp cheddar cheese (shredded)
  • 4 sesame seed buns (for croutons)
  • 1 cup yellow onion, diced
  • 1 cup sliced carrots
  • 1 cup sliced celery
  • 5 cloves garlic, minced
  • 2 teaspoons dried oregano, divided
  • 2 teaspoons dried thyme, divided
  • 6 tablespoons butter
  • 4 tablespoons flour
  • 1 teaspoon white balsamic vinegar
  • Kosher salt
  • Fresh cracked pepper
  • 2 tablespoons olive oil
  • Sliced green onion, for garnish
  • Shredded cheddar cheese, for garnish

Instructions

  1. Preheat your oven to 400°F (200°C). Arrange diced sesame seed buns on a baking sheet and drizzle with olive oil. Bake for about 10 minutes until crispy.
  2. In a large pot over medium heat, brown the ground beef seasoned with oregano, thyme, salt, and pepper. Once cooked through, set aside.
  3. In the same pot, melt butter and sauté diced onion, carrots, and celery until tender (about 10 minutes). Stir in minced garlic and remaining herbs for an additional minute.
  4. Add flour to coat the vegetables and deglaze the pot with a splash of chicken broth.
  5. Pour in remaining broth along with uncooked macaroni; bring to a simmer for 5–7 minutes until pasta is al dente.
  6. Remove from heat and stir in heavy cream and shredded cheese until melted. Add cooked ground beef back into the pot along with white balsamic vinegar; warm through.
  7. Serve in bowls topped with crispy croutons and garnished with green onions or extra cheese.
