- 2–1/4 cups mirepoix (3/4 cup diced carrots, 3/4 cup diced celery, 3/4 cup diced yellow onion)
- 1 tablespoon minced garlic
- 2 (15-ounce) cans diced tomatoes (fire-roasted preferred)
- 2 (32-ounce) cartons reduced-sodium beef broth
- 1 teaspoon dried basil
- 1 teaspoon Italian seasoning
- 1/2 teaspoon dried oregano
- Salt and pepper to taste
- 2 cups uncooked miniature farfalle pasta
- 4 cups fresh baby spinach (coarsely chopped, lightly packed when measured)
Instructions
- In a large 6-quart pot, heat 1 tablespoon of olive oil over medium-high heat. Add chicken sausage and cook until browned. Transfer to a paper towel-lined plate.
- Drain excess grease from the pot, leaving 1 tablespoon. Add remaining olive oil and mirepoix; sauté for 5–7 minutes until tender. Stir in garlic and cook for another 30 seconds.
- Pour in diced tomatoes and beef broth. Add dried herbs and season to taste with salt and pepper.
- Bring the soup to a boil. Add uncooked farfalle pasta and cook uncovered for 7–9 minutes until tender.
- Return browned sausage to the pot and add spinach; cook until wilted (about 1–2 minutes). Adjust seasoning if needed.
