  • 75 g butter
  • 800 g full-fat cream cheese (room temperature)
  • 250 g granulated sugar
  • 200 g sour cream (room temperature)
  • 1 1/2 tbsp cornstarch
  • 2 1/2 tsp vanilla extract
  • 4 large eggs

Instructions

  1. Preheat the oven to 160°C (320°F).
  2. Slice the peaches and toss them with sugar and cinnamon; set aside.
  3. Make the crumble by mixing flour, dark brown sugar, and butter until crumbly.
  4. Crush the digestive or graham crackers, combine with sugar and melted butter, then press into a springform pan for the crust.
  5. Beat cream cheese until smooth; gradually add sugar, sour cream, cornstarch, vanilla extract, and eggs one at a time.
  6. Layer half the cheesecake filling over the crust, followed by half the peach mixture; repeat layers and finish with crumble topping.
  7. Bake for about 105 minutes until set around edges but slightly jiggly in the center. Cool gradually in the oven for an hour before refrigerating for at least four hours.
