  • 2 tbsp. ají amarillo paste

  • 2 tbsp. minced red onion
  • ¼ tsp. salt (adjust to taste)

Instructions

  1. In a large mixing bowl, combine the cooked shredded chicken, mayonnaise, cojita cheese, ají amarillo paste, lime juice, chopped cilantro, minced garlic, red onion, and salt.
  2. Gently fold all ingredients together until well combined. Taste and adjust seasoning as needed.
