  • Double batch of cornbread, crumbled
  • ½ cup milk (more if needed)
  • 4 tbsp unsalted butter (for baking separately)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In one bowl, mix cornmeal, flour, salt, baking powder, and baking soda.
  3. In another bowl, whisk eggs, yogurt (or buttermilk), milk, and honey until smooth.
  4. Combine wet and dry ingredients until just blended.
  5. Melt butter in a skillet; pour batter into the pan and bake for 35–40 minutes until golden brown.
  6. Sauté onion, celery, and garlic in olive oil until softened; combine with crumbled cornbread and seasonings in a large bowl.
  7. Transfer stuffing mixture to a buttered baking dish; cover with foil and bake at 325°F (160°C) for 30 minutes.
