Ingredients

Scale
  • 3 cups bread flour
  • 1/4 cup sugar
  • 1/2 teaspoon salt
  • 1 teaspoon instant yeast
  • 1 cup warm whole milk
  • 1/3 cup warm heavy cream
  • 1 egg
  • 1 egg yolk (for egg wash)
  • 18 ounces sweetened red bean paste
  • Optional: sesame seeds for topping

Instructions

  1. In a stand mixer with a dough hook, combine dry ingredients: bread flour, sugar, salt, instant yeast. Mix well.
  2. Add warm milk, warm heavy cream, and egg; knead on low speed for about 10 minutes until the dough is tacky but not sticky. Let rise for about 2 hours until doubled in size.
  3. Divide the risen dough into 9 equal pieces and shape each into a ball.
  4. Flatten each ball into a circle, place red bean paste in the center, seal it tightly, and shape into a smooth bun.
  5. Place shaped buns seam side down on a lined baking sheet. Optional: cut slits for flower design.
  6. Allow to rise again for about 30 minutes while preheating your oven to 350°F.
  7. Brush with egg wash and sprinkle sesame seeds before baking for about 20 minutes until golden brown.
