- 1–2 large baking potatoes, washed and cubed
- 2 tablespoons olive oil, divided
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1 teaspoon black pepper
- 7 oz block of feta cheese
- 1 head of garlic, top sliced off
- 1 lemon, quartered
- 1 tablespoon honey
- ¼ cup fresh basil, chopped
Instructions
- Preheat your oven to 400°F (200°C).
- In a mixing bowl, combine the cubed potatoes with 1 tablespoon of olive oil, dried thyme, dried oregano, salt, and black pepper. Toss until evenly coated. Spread the seasoned potatoes on a baking tray in a single layer.
- Place the block of feta cheese in the center of the baking tray among the potatoes. Surround it with the head of garlic. Drizzle everything with the remaining tablespoon of olive oil.
- Bake in the preheated oven for about 40 minutes. Halfway through cooking, give the potatoes a gentle stir to promote even browning.
- After 40 minutes, remove from the oven. Squeeze fresh lemon juice over everything and drizzle honey on top. Return to the oven for an additional 10 minutes or until golden brown.
- Once done, remove from the oven and sprinkle chopped basil over the dish. Serve hot as a delicious side that complements any meal!
