Instructions
- Heat oil or butter in a non-stick skillet over medium heat. Sauté sliced mushrooms for 5-7 minutes until golden; season with salt and pepper.
- Add spinach to the skillet and wilt for 1-2 minutes.
- Cut the tomato in half and roast at 400°F (200°C) for 10 minutes or sear face-down in the pan until charred.
- Toast the slice of bread until crispy.
- Fry eggs sunny-side-up or over-easy in the same skillet until whites are set but yolks remain runny.
- Assemble by placing toasted bread topped with mushrooms, fried eggs, wilted spinach, roasted tomato halves, and fanned avocado slices. Garnish with parsley.
