Instructions
- Season beef with salt and pepper. Heat oil in a heavy-bottomed pot over medium-high heat and sear the beef until browned on all sides. Remove and set aside.
- In the same pot, sauté onions until translucent, then add garlic and ginger until fragrant.
- Add curry powder and other spices; cook for 2 minutes.
- Return beef to the pot; cover with broth or water and bring to a boil before reducing heat to low.
- Simmer gently for about 1.5 hours until tender.
