Description

Smashed potatoes are a delightful twist on a classic side dish, combining the best of both worlds: crispy exteriors and fluffy interiors. Boiled until tender, these baby potatoes are expertly smashed and then roasted to golden perfection. The addition of garlic and herb butter infuses each bite with savory goodness, making these potatoes an unforgettable accompaniment for any meal.

Ingredients

Scale
  • 1 pound baby potatoes (such as red or Yukon Gold)
  • 4 tablespoons melted butter
  • 1 1/2 teaspoons minced garlic
  • 1/2 teaspoon Italian seasoning
  • 1/4 cup finely grated parmesan cheese
  • Salt and pepper to taste
  • 2 tablespoons chopped parsley
  • Cooking spray

Instructions

  1. Bring a pot of salted water to a boil. Add baby potatoes and cook for 18-22 minutes until tender.
  2. Preheat your oven to 425 degrees F.
  3. Coat a sheet pan with cooking spray. Drain the cooked potatoes and arrange them on the pan.
  4. Smash each potato gently with the bottom of a glass or potato masher for even thickness.
  5. In a mixing bowl, combine melted butter, garlic, Italian seasoning, salt, and pepper.
  6. Drizzle the butter mixture generously over each smashed potato.
  7. Sprinkle parmesan cheese on top and bake for 20-25 minutes until golden brown.
